Breakfast....it's a meal our whole family loves...yet never gets to eat together Monday thru Friday. With hubby off early to work, Little Man up early and off to school....were lucky enough to be where we have to be on time...LOL LOL
Yes, we do eat breakfast every morning during the week....but from Monday thru Friday we eat fast, easy, sometimes even on-the-go breakfasts. But it is those nice big breakfast that we all wish we had time to sit down as a family and enjoy together!!
So as to not miss out completely on those great big breakfasts all week long....we make one night during the week Breakfast for Dinner night!! And boy oh boy do the kiddies love it!! I actually think this is the only night of the week they both actually clear their plates at the dinner table...LOL LOL
Sometimes we make omelets and toast, sometimes hash browns with eggs and bacon, sometimes pancakes and sausage, or french toast and ham slices....and even on occasion creamed chipped beef with toast topped with a fried egg. Bagel sandwiches with a fried agg, cheese, and sausage or bacon in not uncommon around here either!! Little Man loves pancake and waffle night....as I always let him add a few mix-ins to his pancake...maybe a few chocolate chips perhaps?? It's all the more fun for him to eat!!
Our family is a breakfast loving family....so instead of missing out on that great family meal each morning....we make up for it one night a week with breakfast for Dinner!! It's what works for us very well!!!

Every Sunday night is our breakfast for supper night. It is so easy and the boys think it is so fun. I tried out a new bacon and cheese quiche recipe and they all said, "I could eat this all the time!"

Like you we do not eat breakfast . So I too love it for dinner.
We did this tonight--I made apple cinnamon french toast/pancakes (for the kids). I sauteed some apples with margarine, cinnamon and brown sugar and served it over the french toast and pancakes. Yummy!
