For this weeks Tackle it Tuesday, it is all about trying to use up 2 large Zucchini's I have before they spoil. So what better to make than Zucchini Bread?? Mmm I love Zucchini Bread...I can still remember the taste of my Mom's when I was a kid...delicious!! So, I asked her for her recipe to give it a try....so here go, wish me luck!!! (I am by far not the best cook..but I always attempt, at least!!)
You will need:
3 Eggs
1 3/4 cups sugar
1 cup oil
1 cup oil
2 cups zucchini (grated and skin unpeeled)
3 tsp. vanilla
3 cups flour
3 cups flour
1 tsp. salt
1 tsp baking soda
1 tsp baking soda
1/2 tsp baking powder
3 tsp cinnamon
1 cup walnuts
First beat eggs, add sugar oil, zucchini, and vanilla. Mix lightly but well. Next combine dry ingredients is separate bowl and mix lightly. Put wet and dry ingredients together, then add cinnamon and nuts. Pour into 4 greased and floured small loaf pans.
Bake at 350 degrees for 30 minutes and then cool on rack.
Mmm....slice and Enjoy!!!

I love your pictures. I have never made this kind of bread, but having the recipe and what the finished product is supposed to look like, just might help me get it done.
